Yes, you read that right. We celebrated Joe’s birthday, and I could not help but share the deets on his gluten-free, lactose-free chocolate caramel cake!
He used this cake mix. Betty Crocker gluten free cake and cookie mixes not only taste amazing, but they are made with better ingredients than typical boxes cake and cookie mixes. We are talking no hydrogenated/trans-fatty ingredients. It’s pretty amazing. Just know that not all Betty Crocker mixes are gluten free, so double check the front of the box before buying. 🙂
We buy Betty Crocker gluten free mixes at our local grocery store, but you can also buy it here. Follow the directions on the box. While it is cooking, make the caramel sauce found here (you can make the seven-layer bars another time — trust me). 🙂
After the cake is out of the oven, poke holes throughout the top of the cake. After poking the holes, pour the caramel sauce over the top. It is SO good! We topped it with a homemade chocolate frosting, but you can also use coconut whipped cream (we buy this at our local grocery store in the frozen section).
